Description

Discover the naturally sweet, savoury flavour of Whole Sugar Kelp. Also known as Sweet Kelp, this thick and fleshy brown seaweed has a gentle chew and a subtle sweetness from naturally occurring mannitol, making it a delicious alternative to traditional kombu.

Soak it briefly and use the flavourful liquid in soups, broths and sauces, or simmer the seaweed with beans, vegetables and grains to create rich coastal depth. It is also delicious served as a buttery vegetable, sliced through salads, baked until crisp or added to pickles in place of capers or cornichons.

Naturally versatile and full of umami, Whole Sugar Kelp brings a delicious balance of savoury richness and delicate sweetness to everyday cooking.

HOW TO USE

Wipe dry Sugar Kelp gently before use. To rehydrate, soak in cold water for up to 10 minutes and use the soaking liquid as a flavourful stock. If salted, wash thoroughly before use; if fresh, rinse gently.
Simmer for up to 30–40 minutes, then serve as a vegetable with butter, slice into salads or add to soups, stews, beans and broths. Sugar Kelp can also be baked, pickled or used in place of kombu. Try it with vegetables, beans, butternut squash, butter and savoury sauces.
